Yes, for REST v3 calls which return a list of entities, Jive will return a Jive REST API v3.0 → Summary entity instead of the full entity (ie People, Place, Content). Thankfully, they also have the fields parameter you can add to most if not all of these request which you can you to specify which fields will be returned for the request.
In your example, if you would like to get the location and name fields for all users, you would use /api/core/v3/people?fields=name,people. Note that there is an obscurely or perhaps undocumented value you could use with fields to retrieve all the field values which is @all, so your call would be, /api/core/v3/people?fields=@all.
Note that the id and resources fields will always be returned and if an entity does not have the field specified, it will not exist in the returned response entity (as opposed to the field being returned with a null value).
